Update lighty.io build

Lighty 19.x branch is now available in the official repo.
And building lighty.io snapshot is no more required
since Lighty 19.0.0 is out on maven central.
- update lighty pom.xml to use it
- update build shell scripts accordingly
- improve these scripts with more comments and mvn configuration options
